Creamy Lemon Cookies



Creamy Lemon Cookies
2 C flour
½ t baking soda
¼ t salt
1 C brown sugar
½ C sugar
½ C butter, softened
4 oz cream cheese, softened
1 egg
2 t lemon extract

Combine flour, baking soda and salt. In separate bowl combine sugars well. Add butter and cream cheese and mix to form a smooth past. Add egg and lemon extract and beat at medium speed until light and soft. Add the flour mixture. Blend at low speed just until combined. Do not overmix. Drop by rounded tablespoons onto ungreased cookie sheets. Bake for 8 minutes. In my oven with my cookie sheets I have to turn the cookies over at the halfway point, otherwise they burn.I look forward to trying this with other flavors of extracts.
