Hedging my bets, I have some pansies still in seed tray and some in transitional tray.

Pumpkin Bars--Plain but nice

Pumpkin Bars—Plain but nice

1 ½ C flour

½ t salt

1 C sugar

1 t soda

1/4 t Ginger

½ t Cinnamon

½ t Cardamom

1 C pumpkin puree

½ C vegetable oil, such as corn or canola

2 eggs

¼ C apple juice

Combine dry ingredients. Mix oil, eggs, pumpkin puree, apple juice. Combine egg mixture and dry mixture. Bake in 9-inch square pan for 35 minutes.

Ordinarily one would include a half-teaspoon of nutmeg, I included a tiny amount, the last of a jar. Conversely, I used cardamom primarily because I happen to have two jars of that spice.

Tomato Soup Spice Cake

Tomato Soup Spice Cake

½ C butter or shortening

½ C white sugar

½ C brown sugar

1 can condensed tomato soup

1 t baking soda

2C flour

1 t cinnamon

½ t nutmeg

½ t cloves

½ C chopped pecans

Cream shortening and sugars. Add tomato soup. Mix well. Mix dry ingredients. Combine soup mixture and dry ingredients add pecans last. Bake for 45-60 minutes, if in loaf pan. Bake 35 minutes if in muffin tins.

Peanut Butter M & M Cookies

1 C brown sugar

½ C white sugar

1 C shortening

2 eggs

1 ½ t vanilla

2 ½ C flour

1 t baking soda

1 t salt

M & M enough to decorate

Cream shortening and sugar. Add eggs and vanilla. Mix dry ingredients. Combine dry mixture and egg mixture. Chill in refrigerator. Form into spheres; flatten. Decorate with M & M candies. Bake at 350 degrees for 8-12 minutes, depending on size of cookie.
